Fizzy to Fizziest Kombucha

Fizzy Kombucha flavoured drink is great. It’s great to have significant fizz. Here I have achieved something like a world record in fizziness.

Airtight bottles and experience gained in repeated experiments have created this stunning feat.

Here the second fermentation is using mango juice.

Chakka Undas. Jackfruit Balls.

Chakka Undas or jackfruit balls are probably the most traditional and difficult to make Kerala sweets.
Ripe jackfruit deseeded and flesh mashed in NutriBullet into a purée
Ghee is heated in a hard bottom vessel and the purée is added. It’s mixed well stirring constantly.
A little bit of ginger powder is added which is the only ingredient used here as I want sugar free genuine undas.
The shelf life is dependent on how long the cooking and stirring takes place.
I made quite a bit some four years back and some are remaining in the refrigerator for a quick snack with coconut slices.
While it took some hours, this is completed in a couple of hours.
The cooled down varatty is made into small balls and run over roated rice powder so that they won’t stick together.
I have 50 chakka undas here to last for a few months.

How to Make Dosa Without Oil! UsAsahi Kasei Frying Pan Foil.

Oil Free Dosa

Asahi Kasei Cooking Contest
Contestant: Kurian Jacob
Dish: Dosa using frying pan foil.
Dosa is not a joint winner with Idli in world’s healthiest breakfast title, because of use of oil or unhealthy nonstick materials.
Asahi Kasei’s frying pan foil resolves it. No oil or no use of unhealthy cooking vessels.
Here I’m making dosa on easy to use and clean Asahi Kasei frying pan foil, the real revolution in frying or cooking.

The Smallest Mango Tree

It was happiness. We fought together some severe pest attack and survived.

This little budded tree on my balcony gave a real tasty naadan (local small variety) mango.

Enjoyed, just like in the traditional way. First tasted the remains left on the andy (seed). Then had the two thin ones called palaka pool (plank pooled portion) and finally the best parts the metthha pools (the thick bigger cuts). Bliss.

What if I grow a new one from the seed.

An Athlete Too!

THE DAY WHEN I FELT RICH!

Imagine getting ₹300 all for oneself, some 55 years back. That’s what I got for coming 2nd in Shot Put in Kerala School’s Games, competing without any practice or training.

To spend that much money, when paise 25 was getting three idlies, one big steamed Kerala Banana and a glass of tea. Lots of friends were required to enjoy the booty.

There started my love affair with shot put which lasted till I passed out from University.

Now the affair is restored and I won a gold in shot put today in Kerala State Masters Games in Kollam.

An Athlete Too!

Sportsman Never Retires

That’s thanks to Masters Games where local, national and international meets are held for age groups.

I am in it for swimming for the past three years. Participation is quite satisfying and medals sweet rewards.

Here are three golds and a silver in yesterday’s swimming competition.

And then, I was an athlete and Masters Athletics is taking place on December 11 and 12 and I am registered for that too.

You don’t have to retire from sports.

Proud to be part of a Champion Team. Happy to contribute with four gold and two silver medals in the Kerala State Swimming Championship in my age group.
Humbled by the achievement.

A DIWALI SPECIAL by NATURE.

The sunset leaves a mark practically everyday over the backwaters. And it knows to give something special for Diwali.
Across the water, the Vice Admiral’s residence is lit for the festival. But nothing can match what nature can give.
It’s not IPhone 13 Pro, it’s just the 11 that I have. It had the small circle that came up after the click to rotate once clockwise and then anti, to optimise this picture. Other than that, no photo shop, no editing and ain’t it stunningly beautiful?

My Little Mango Tree!

മാവു പൂത്തല്ലോ, ഞ്ഞാവൽ കാ പഴുത്തല്ലോ, ഇന്നും കാലമായില്ലേ, ഏൻടെ കൈ പിടിച്ചീടാൻ.
My little mango tree in grow bag is flowering.
It’s a unique dwarf variety, budded which means two varieties of mangoes in one tree.
I know it’s the early flush and usually taken out so that tree matures.
Perhaps I will leave it to the plant to decide.
Super excited to see the flowering buds.
Hence the relevant lines from my all time favourite Malayalam song ☺️ (പാട്ടിൽ കാടിനു പകരം മാവാക്കി)
